OK, I made cranberry sauce today. What's wrong with that? It keeps for ages and I wanted a turkey and cranberry sauce sandwich for lunch tomorrow. And...I'm organized.
This baked cranberry sauce is easier to do than opening a jar. Take 1 pound cranberries, 1 cup of sugar and the zest and juice of one orange. Pour them all into a roasting pan, mix around a bit and then roast at 350°F for about 45 minutes. You'll end up with a shiny, beautiful scarlet sauce that will stay good at least until Christmas.
