I know it's a travesty to melt beautiful, smokey mozzarella from Di Paolo's, the finest Italian food importer within a reasonable distance from my home, but I just couldn't help it. A load of leftover baked potatoes, an oven, and smoked mozzarella rendered trembling, delicious potato skins that left me weak at the knees.
These look amazing. I love potatoes and cheese.
